June : Part 1

Thursday, June 18, 2020
Only part way into June and already, it's been a busy month!
Siamo solo a meta' giugno ed ho gia' fatto molto!

Gus is doing great. Loves hanging out on the balcony and chasing moths, squirrels, and cats on our walks.
Gus sta molto bene.

Murder Mystery Party (on Zoom) for a friend's birthday. I was Pat Capone, mobster turned pop icon. I (obviously) didn't do it.

Fresh peonies from Trader Joe's

Trying to find something to do, so lots of hiking, running, walks, and I even started playing tennis.

Hike up to Double Peak Trail in San Marcos

Lots of walks with Gus in the neighborhood. We pass by this house often and I love it so much. It reminds me of a Disney cottage.
Tante camminate con Gus nel quartiere. Passiamo questa casa spesso e a me piace molto.

There is a tree near me that has had hundreds of caterpillars on it lately. They have completely eaten most of the leaves and have been fascinating to walk by every day.

Let's talk food! I was determined to meal plan this week and it was quite successful. I'll try to link all the recipes I used, but some were in a cookbook and others are just recipes that I made up on the spot.

Made some crackers to have when I make charcuterie boards. Went with the Cacio e Pepe crackers from the NYT Cooking site. They turned out really good.

(almost) Meatless Monday was Chrissy Tiegen's Sweet Miso Butter Cod (but I used Tilapia) with homemade Caesar Dressing (salad from the balcony and croutons were the Cacio e Pepe crackers) and roasted brussel sprouts, carrots, and bacon.

Tuesday: Chicken Fajitas with Spanish Quinoa

Wednesday: Chrissy Tiegen's Pulled BBQ Chicken Sandwiches (these buns) with Alexia Waffle Fries.

My ranking of the meals:
1) Carbonara*
1) Pulled BBQ Chicken*
*Tied for first. Both of these were SO GOOD.
3) Miso Tilapia
4) Chicken Fajitas (not bad, just boring)

For dessert, slowly working on this ice cream from Salt and Straw. It is like rice krispie treats within ice cream deliciousness.
Per dolce, questo gelato.
